Turkey & Spinach Meatballs

You caught me, I try to sneak veggies in everything! But these hit the mark when it comes to a flavorful and healthier meatball. I have the kids squeeze the juice out of the spinach, and mix the meatball mixture together with their hands. I find no matter what I am cooking, whether its veggie filled or not the kids tend to eat more of it if they have a hand making it!

Here is what you need:

  • 1 lb ground turkey
  • 1 cup breadcrumbs (I didn’t have breadcrumbs handy, so I put some croutons in my food processor and ground them up!) Sshh, don’t tell anybody 😉
  • 2 eggs
  • 8 oz package of frozen spinach, thawed
  • 1 teaspoon olive oil
  • 1 tablespoon garlic (fresh or dried)
  • 1 tablespoon Italian seasoning
  • 1 tablespoon parsley (fresh or dried)
  • 1 jar pasta sauce
  • 1 lb pasta

Here is what you do:

  • Preheat oven to 350 degrees
  • Mix turkey, eggs, seasonings, bread crumbs, and oil until well combined
  • Squeeze all the water out of the spinach (I used a colander over a large bowl using a small bowl to squeeze it out. Empty water and set aside. (The kids think this part is fun!)
  • Then fold in the spinach into the mixture until mixed together well
  • Spoon about 1 inch wide meatballs and roll together with hands, pressing firmly
  • Place onto a baking rack placed on top of a baking sheet
  • Cook for 20 minutes
  • Place meatballs into the sauce and cook covered for 10 minutes
  • Cook pasta until al dente, scooping 1/2 cup of the pasta water right before draining
  • Pour reserved pasta water, sauce, meatballs and pasta back into pot
  • Mix together and cook covered for 5 more minutes
  • Let cool and ENJOY!
