When it comes to tacos there is one question everybody must ask themselves, corn or flour tortillas? This has been the source of fights and arguments all across the land, and I am here to tell you that you don’t have to choose! I have found the best way to make both, that you will love no matter which side you take.
When it comes to the tortillas I prefer the flour to be warmed in a dry frying pan until slightly toasty. While the corn tastes better grilled for a few minutes on each side.
The next choice, the meat. Whether you prefer Chicken or Beef this 2 ingredient quick and easy marinade will tenderize and add flavor.
For the marinade you need:
- Sliced onion
- Sliced lemon
Then refrigerate over night
Next, this is my go to taco slaw recipe. It’s a must have on any taco (especially with the corn tortilla). Its easy, tasty and quick!

Now its grilling time! I like my steak a little pink in the center, but you can cook it to your preference. (Here is a little trick to add more flavor: Halve a lemon and rub it over the bars in your grill everywhere your meat will touch)

I sprinkle on taco seasoning to one side of the meat to add some more flavor. I found if you do it on both sides its over powers a little bit.
Presentation for taco’s is always fun! Use different color plates and bowls to add some fun. I like setting out refried beans, cheese and salsa in addition to the slaw, cilantro and grilled lemons. (I grill the lemons with the meat and squeeze it over my tacos. It adds a zip and freshness.)
Fill the tortilla with your favorites, crack open a Corona or mix up some margaritas!
